Set aside the other half for later.
Next, whip with a handheld mixer a cup of whipping cream until hard peaks form.
Continue to whip until well combined, then gently fold in 1 cup of pineapple chunks.
(you might put the mixture in a whipping bag so its easier to transfer the pineapple mixture.)
