Ingredients:
Note: you could use unsalted butter if preferred.
Take note that it is important to cool the caramel before whipping it to get a perfect outcome.
Place it over low heat.
Do not mix itjust let it sit until it melts and becomes brown.
The edges will be the first to brown.
Step 2:
Once browned, add the salted butter and mix constantly until its well incorporated.
It should now have a caramel color and smooth texture.
Do not stop mixing until you dont have the right consistency.
Step 3:
Add the double cream and mix constantly for about 2 minutes.
It should have a smooth texture.
Step 4:
Let it cool for a few minutes, then pour it into a bowl.
Place it in the fridge for about 15 minutes.
Step 5:
After 15 minutes, remove it from the fridge.
Whisk the caramel for about 15 seconds, then place in the freezer for about 10 minutes.
It should become lighter and very creamy.
Be sure not to over-mix it.
