Mix with your hands and thoroughly coat the chicken with the cornstarch.
Now, heat 3 tbsp oil in a wok or pan over high heat, then add the chicken.
Fry while stirring them occasionally until theyre golden brown.
While the chicken is cooking, go ahead and make the sticky pineapple sauce.
Fry them for two minutes.
Next, add the pineapple chunks and cook for another two minutes while stirring constantly.
Now, add 2 cloves of minced garlic and 1 tsp minced ginger.
Stir fry all together for another minute.
Lastly, add the sauce.
Bring it to a boil and let it reduce while stirring occasionally (about five to six minutes).
Turn off the heat and serve.
