Add 3 oz of butter and let it melt.
Once melted, add minced garlic and saute for about a minute.
Step 3:
Gradually add 2 cups of low-fat milk and bring it to a boil.
Stir constantly until the sauce thickens for about 2 to 3 minutes.
Once done, remove it from the heat.
Step 4:
Add 1 1/2 cups of cheese and mix until melted.
Next, add the thinly sliced Yukon golden potatoes and stir until everything is well-coated.
Step 5:
Transfer the mixture to a baking dish greased with cooking spray.
Sprinkle the remaining cheese on top.
Cover the baking dish and bake for 30 minutes.
Sprinkle finely chopped parsley on top before serving.
