Next, dice 1 medium onion, and grate 3/4 cup of parmigiano and 1/3 cup of mozzarella cheese.
Now, add 2 tbsp olive oil and 2 tbsp of butter in a pan over medium-low heat.
Next, add the diced onions.
Saute for a few minutes, then add the chopped butternut squash and chopped sage.
Season with 1 tsp kosher salt and 1/2 tsp ground black pepper.
Turn on the heat to medium and add 2 cups of chicken stock.
Let it simmer for 20 to 30 minutes or until the butternut squash softens.
In the meantime, cook your pasta according to its package directions.
Mix well, then add the cooked penne pasta.
Toss well, cooling it a bit, before adding the cheese.
Cover the casserole with parchment paper, then foil on top, wrapping it around.
Bake at 375 degrees F oven for 30 minutes.
After 30 minutes, remove the cover and bake for 10 more minutes.
