This is one of the best enchilada recipes Ive ever tasted, and its a staple in our house.

My family truly loves this recipe, and I always have clean plates whenever I serve this for dinner.

Beef and Cheese Enchiladas Recipe

Once melted, add 2 tbsp of all-purpose flour and whisk together for a minute.

Bump the heat to high and bring everything to a boil, stirring occasionally.

Once boiling, remove it from the heat.

Saute for four to five minutes until soft.

Next, add the ground beef.

Season with salt and pepper to taste, then cook the beef until browned.

After this, add 1 cup of red enchilada sauce and 4 oz can of diced green chilis.

(Heat up your tortillas at this point.)

Step 3

Now, start assembling everything.

Sprinkle some cheddar cheese on top, then roll it up.

Place it, seam side down, into the casserole dish.

Repeat these steps until you finish your meat mixture.

Place it in the preheated oven and bake for 20 minutes.

After this baking, garnish the top with chopped green onions, chopped cilantro, and pico.
