The key to achieving the perfect fried mushroom lies in the preparation.
Add 2 tbsp extra virgin olive oil and 2 tbsp butter in a large pan over medium heat.
Once the butter melts, add the mushrooms and baste them in olive oil and butter.

Cook the mushrooms until they turn brown, giving them a toss every three minutes.
Once browned, add 1/4 cup dry white wine and mix.
Continue cooking until all the wine dissipates (about three to four minutes).
