Add the egg whites to the stand mixer along with 1/4 tsp salt.
Beat until foamy, while gradually adding 1 1/4 cups of sugar.
Beat until hard peaks, adding 2 tbsp lemon juice last.
After this, remove the mixing bowl from the stand, then add 3 1/4 tbsp cornstarch.
Add the meringue to a parchment paper-lined baking sheet, spreading it nicely and evenly.
Sprinkle some almond chips and bake at 320 degrees F oven for 30 minutes.
In the meantime, make the cream.
Mix using an immersion blender.
Slice some fresh berries of choice for topping and filling.
Flip it upside down, then peel the parchment paper.
Spread the cream evenly and nicely (leave some for toppings), then add the freshly chopped berries.
Roll the meringue slowly and gently, then top the roll with the remaining cream and fresh berries.
Slice the roll into serving portions, and serve.
