After this, remove them from the pot and wash them with cold water.

Pat them dry with a paper towel and set them aside.
Mix well and set it aside.
Next, dice the onion and finely chop the eggplant.
Set aside as well.
Once browned, add the chopped onion and eggplant.
Once everything is cooked, add the tomato sauce and reduce the heat.
Mix until well combined.
(Add more tomato sauce if needed.)
Simmer until the sauce thickens.
Cook it for 20 to 30 minutes.
