You no longer need to buy them from the grocery and just make fresh and homemade ones at home.

This will become easier to roll without breaking.
Step 2:
In a preheated pan, add a quarter cup of oil and all-purpose flour.
Mix and cook for 1 minute.
Next, add the chicken bouillon cube and crush it into small pieces.
Add the chili powder and turn the heat to medium.
Mix until well combined.
Add tomato paste, ground cumin, and onion powder.
Then add the water while continuously stirring the sauce.
Let it simmer until it thickens.
Step 3:
Assemble the chicken enchilada.
Get one corn tortilla and add the cheese and chicken.
Roll then place in a 9 x 13 baking pan.
Continue until the bottom of the pan is filled.
Once done, pour the sauce on top.
Next, spread the cheese.
Step 4:
Cover the baking pan with aluminum foil.
Continue baking uncovered for 10-15 minutes or until the cheese is melted on top.
