Chi Chis enchilada was my favorite food back in the day.
I was craving it last week but couldnt find copycat recipes that had the same flavors.
Then I stumbled across this casserole recipe byViews on the roadand knew I had to try it right away.

I was so happy that it was the one Id been looking for!
It was delicious and brought back a lot of memories.
Once melted, add the all-purpose flour and mix for 10 to 15 seconds.
check that not to burn your butter.
Mix until well combined.
Once its boiling on the sides, add cheese and turn the heat off.
Continue to mix until the cheese is well incorporated into the sauce.
Step 3:
Transfer most of the sauce into a container and set aside.
Give it a gentle mix and coat everything with the sauce.
Once done, turn off the heat.
If its a bit dry, it’s possible for you to add 1 tablespoon of milk.
Step 5:
In a different pan, warm your tortilla.
Step 7:
Take your filling and put it into your warm tortilla.
Roll and place on your baking dish.
Repeat with the remaining tortillas.
Step 8:
Pour the sauce over the top, then sprinkle the cheese.
Slightly sprinkle some paprika over the top.
