I still couldnt believe how delicious these chocolate chip shortbread cookies were!
They turned out so good and better than I expected.
The chocolate chips and melted chocolate surely elevated the flavors of these cookies.

They are super easy to prepare perfect for desserts or snacks.
Serve it with a cup of coffee, chocolate, tea, or juice.
Beat together using a hand mixer until light and fluffy.
Beat in vanilla extract until combined.
Step 2:
Add the flour and mix until flour disappears.
Add the mini chocolate chips and fold until well incorporated using a rubber spatula.
Roll the dough until its 1/4 inch thick.
Refrigerate until firm for about 1 to 2 hours.
Place them on a baking sheet lined with parchment paper.
Step 6:
Add dipping chocolate into a microwave-safe bowl.
Melt in the microwave on high for about 30 seconds at a time, stirring after intervals.
Dip each cookie in the melted chocolate covering 1/3 or 1/2 of the cookie.
Place on parchment paper to harden.
Step 7:
Serve and enjoy!
