Its crispy outside but very soft inside.
It is topped with a churro-flavored frosting and then sprinkled with cinnamon sugar.
Give this recipe a try I am sure you will love it.
Start by mixing flour, baking soda, cream of tartar, and salt.
Once mixed, set aside.
Beat until light and fluffy using a hand mixer for about 3 minutes.
Add eggs and vanilla extract.
Beat until light and fluffy.
Step 3:
Add the dry ingredients to the butter-sugar egg mixture.
Beat until well combined.
Cover and place in the fridge for 30 minutes.
Step 4:
Make the cinnamon sugar mixture by combining the two ingredients in the bowl.

Make the frosting.
In a different bowl, add the cream cheese, salt, and unsalted butter.
Whisk until light and fluffy.
Add the powdered sugar and beat again.

Beat until smooth and creamy.
Refrigerate for 15 to 20 minutes.
Step 6:
Scoop the cookie dough using an ice cream scoop to make 16 balls.
Drop each one into the cinnamon sugar mixture to coat.
Place 6 balls on a baking sheet lined with parchment paper.
check that to space each one.
Step 7:
Bake at 375F for 8 to 10 minutes.
