Next, prepare and chop your veggies accordingly and set them aside.
Now, heat a heavy pot over medium heat and melt 6 tbsp unsalted butter.
Once melted, add the chopped onions and carrots and saute for eight minutes.
After theyve softened, add the chopped mushrooms and minced garlic and continue to saute for another five minutes.
Next, add 1/3 cup all-purpose flour and stir constantly for two minutes.
After this, add 2 1/2 cups chicken stock and 1/2 cup heavy cream.
Bring everything to a simmer, stirring frequently.
Season with 2 tsp fine sea salt and 1/4 tsp black pepper.
Now, add the shredded chicken, 1 cup of frozen peas, and 1/4 cup of chopped parsley.
Mix well, then turn off the heat.
