Nothing is more comforting than a warm and flavorful beef stew!
The beef and vegetables are perfectly cooked, and the sauce is fantastic.
Its the perfect meal for your whole family.

You should be left with about 3.5 lbs of meat.
Place the meat cubes into a bowl and drizzle with olive oil and 2 large pinches of salt.
Toss the meat, then spread it onto a half-sheet tray.
Place in the oven and sear for 20-25 minutes until well browned.
Step 2:
Place a large heavy-bottomed pot over medium heat.
Cook for 3 to 5 minutes until it begins to soften and caramelize.
Transfer the vegetables to a bowl and set them aside.
Once melted, add the flour and stir.
Cook for 60 to 90 seconds until smooth and a little bit brown.
Step 4:
Pour the beef stock and beer, and let it come to a simmer.
Stir and scrape frequently.
Once its simmering, add the beef.
Place the pot uncovered into a 300F oven and cook for about 2 hours.
Stir it halfway through.
Step 5:
Add the potatoes to the vegetables, followed by 3 tablespoons of flour.
Step 6:
Add the veggies into the stew pot and gently stir.
Next, add the bay leaves and thyme.
Place back in the oven and cook for another hour.
Step 7:
The beef should be tender and the potatoes should be fork tender.
Remove excess fat from the top of the stew.
Add the peas and mix well.
Taste and adjust seasonings if needed.
