Mix all ingredients until well combined.
Step 2:
Season with salt and freshly ground black pepper and mix well.
Set it aside and prepare vegetables.
Blend until crumbly, then add to the mixture.
Crush into very small pieces, then transfer to the mixture.
Step 5:
Mix everything with a wooden spoon until well combined.
Step 6:
Place one tortilla on a plate.
Scoop 1/2 cup of the filling and put it on the center of the tortilla.
Spread the filling evenly, then roll it tightly.
Repeat with the remaining mixture and place them on a plate.
Step 7:
Place the rolled tortillas in the fridge for one hour to chill.
Step 8:
After one hour, remove veggie pinwheels from the fridge.
Slice into 1-inch rounds and place on a plate.
Serve and enjoy while cold!
