Next, melt 3 tbsp butter in a saucepan over medium heat.

Once the butter is fully melted, add 1/3 cup of flour and cook for one to two minutes.

After this, gradually add 1 cup of milk while whisking constantly.

Bring the mixture to a boil, then cook for another two to three minutes until thickened.

Season with 1/2 tsp salt, 1/4 tsp paprika, and 1 tsp Dijon mustard.

Folding the cheese and meringue to make the cheese souffle

Mix well, then add the egg yolks one at a time.

Sprinkle some freshly ground black pepper and mix.

Next, add a pinch of salt to the egg whites and whip until soft peaks.

After this, gradually fold it into the cheese mixture, then divide it evenly into the prepared ramekins.

Top it with some grated parmesan (optional).

Place the ramekins on the preheated baking sheet, then into the oven.

Bake at 375 degrees F for 25 to 30 minutes or until puffed and golden.
