Step 2:
Place a large pot over medium heat.
Add the pancetta, some chili flakes and olive oil.
Cook until soft and translucent.
If youre going to add Parmigiano rind, add them now.
Let it come to a boil.
Once boiling, lower the heat to a simmer.
Cook the vegetables until soft for about 40 minutes.
Make a taste test and adjust seasonings if needed.
Step 6:
Garnish with parmigiano, olive oil, and chopped parsley.
