Eggs benedict has four key components: English muffins, poached eggs, Canadian bacon, and hollandaise sauce.

Step 2:
In a measuring cup, add egg yolks and whisk until pale yellow.
Add lemon juice, cayenne or paprika, and black pepper.
Set it aside for later.
Step 4:
Take a medium saucepan and fill it with 3 inches of water.
Place over high heat and bring it to a boil.
Once boiling, reduce the heat to keep it simmering.
Stir in the vinegar.
Poach the egg for 3 to 5 minutes.
Adjust time depending on your desired doneness.
Once done, remove the egg with a slotted spoon and gently place it on a plate.
Repeat the same process with the remaining eggs.
Step 6:
Slice the English muffins in half and toast.
Step 7:
Place a large skillet over medium-high heat.
Once hot, add the bacon and cook on each side until heated through.
Spoon the homemade Hollandaise sauce over the top, then garnish with chives.
Sprinkle with cayenne or paprika.
