Mix and wait for 5 minutes.
Step 2:
Beat one egg, then save 12 teaspoons for the egg wash later.
Pour the remaining into the yeast mixture.
Mix well, then add the flour and salt.
Mix until a dough forms.
Add 1 tablespoon of olive oil and knead the dough to incorporate the oil.
Transfer to your work surface and continue to knead until smooth.
Cover and let it rise until it doubles in size.
Step 3:
Add minced garlic and chopped parsley to the softened salted butter.
Step 4:
Grease a 9 x 5 loaf pan with unsalted butter.
Step 5:
Remove the cover of the dough and deflate to remove air bubbles.
Sprinkle some flour on top, then flatten the dough into a 7 x 14 inches rectangle.
Step 6:
Spread the butter garlic parsley mixture on top, then sprinkle grated mozzarella cheese.
Step 7:
Roll the dough from the short end.
Divide into 10 equal parts, then transfer to the prepared loaf pan.
Cover and let it rise for 30 to 45 minutes.
If the top is browning too much, cover it with aluminum foil.
Once done baking, transfer to a cooling rack and let it cool before serving.
