Whisk to combine, then set aside.
Step 2:
In a separate medium bowl, add light brown sugar and granulated sugar.
Whisk until smooth and well combined.
Step 3:
Add half of the flour mixture to the sugar mixture.
Mix to combine, then add the remaining flour mixture.
Mix until it becomes a smooth dough.
Step 4:
Fold in the roughly chopped chocolate.
Cover the bowl with plastic wrap and refrigerate for an hour.
Step 5:
Preheat your oven to 350f, then line two sheet pans with parchment paper.
Step 6:
Get 2 1/2 tablespoons of dough and roll it into a ball.
Coat it with the cinnamon sugar mixture then place it on the prepared sheet pan.
Repeat with the remaining mixture, spacing them about 2 inches apart.
Only add 6 cookies per sheet pan.
