Heres a German potato salad with homemade bacon dijon dressing byDownshiftology.

Its tangy, savory, and doesnt contain any mayo.

Bring it to a boil, then season the water with salt.
Once boiling, reduce the heat and cover it with a lid.
Let it simmer for 10 to 15 minutes or until fork tender.
Drain the water and leave the potatoes in the pot, letting them cool for about 5 minutes.
Once you could handle them, slice the potatoes into chunks and put them back in the pot.
Step 2:
Time to fry the bacon.
While waiting for the potatoes, fry the bacon in a large skillet over medium heat.
Once crispy, transfer them to a plate lined with a paper towel using a slotted spoon.
Next, add the garlic and saute for another minute.
Whisk the ingredients, while pouring the vinegar.
Continue whisking for 1 to 2 minutes until slightly reduced.
Step 5:
Pour the dressing over the chopped potatoes in the pot.
Add the crispy bacon pieces and gently toss everything together.
Dont mash the potatoes.
Transfer to a plate and garnish with fresh parsley.
