This homemade tomato soup is made from scratch with a twist of grilled cheese on top.

Mix together and double-check all the tomatoes are nicely coated.
Transfer the tomatoes to a parchment-lined baking tray making sure they are positioned cut side up.
Place them in a preheated oven at 400 degrees F and roast for 45 minutes to an hour.
After this, blend everything using an immersion blender until smooth texture.
Give it a good stir and bring everything to a simmer and cook for two minutes.
Now, add the other half of the fresh basil and cook it for another two minutes.
Transfer the soup to a serving bowl and add some croutons on top and grated cheese.
Place it in a 375-degree oven for a couple of minutes or until the cheese is melted and bubbly.
