Step 2:
Get a non-stick 12-slot muffin pan and grease it with cooking spray.
Step 3:
Place a large skillet over medium heat.
Step 4:
Saute the vegetables for about 5 to 7 minutes.
Cook for an additional 2 minutes.
Step 5:
Season the vegetables with salt and black pepper, then mix well.
Once done, remove from heat.
Step 6:
Grease the muffin tray so it will be easier to remove each piece.
Put 1 heaping tablespoon of the vegetable mixture in each slot.
Step 7:
Crack 7 eggs in a bowl and whisk together.
Pour the beaten egg into the slots of the prepared muffin pan.
double-check not to fill it until the edges.
Step 9:
Once the eggs are done, remove them from the oven and tray.
Let them cool slightly and serve with hot sauce on top if desired.
