This recipe has to be the best quinoa salad I have ever made at home.
Quinoa is a great carbohydrate choice as it is rich in nutrients.
Quinoa has a natural coating that tends to be bitter.

The Mediterranean Dish suggests rinsing them well before cooking if you dont like the bitter flavor.
Add a drizzle of olive oil and a pinch of salt while it simmers.
In a bowl, zest and juice 1 lemon.
Add 3/4 teaspoon of kosher salt, and a teaspoon of dried oregano.
Whisk the mixture while pouring 1/4 cup of olive oil.
Step 3:
Chop the bell peppers and cucumber into small cubes.
Add all of them in the same bowl as the dressing.
Step 4:
Once the quinoa is cooked, give it a mix.
Add into the salad bowl.
Mix everything until well combined.
Step 5:
Sprinkle creamy feta cheese on top and some olives.
Mix and let it sit for a couple of minutes before serving.
