Step 2:
Place the strawberries in a blender and puree until smooth.
Set the berry pulp and remaining juice for later.
Step 4:
Once reduced, add 2/3 cup of milk to the strawberry and whisk together.
Now is the perfect time to add food coloring, if using.
Beat until well combined.
Get a different bowl and whisk together flour, baking powder, and salt.
Stir until just combined after each addition.
Gently fold egg whites into the cake batter until combined using a spatula.
Invert onto a cooling rack to cool completely.
Step 9:
Prepare the filling.
Place it over medium heat and let it come to a boil.
Once boiling, whisk constantly until thickened.
Remove from heat, transfer to a heat-proof bowl, and place in the fridge to cool.

Make the frosting.

Set the mixer on low speed.
Mix cream cheese, and whipped cream until completely combined.
Step 13:
Place one layer of cake on a serving tray.
Pipe a dam around the edge of the cake and fill the center with jam.
Top it with a second layer and cover the cake with frosting.
Place in the refrigerator until ready to serve.
