Most of the ingredients you need for this dish are basic and cheap.
It is super easy to make and ready in just a few minutes.
Once done, wash and air dry.
Step 2:
Place a large pan over heat and add 3 tablespoons of vegetable oil.
Once hot, add the sliced okra and cook for 5 to 7 minutes.
Transfer to a plate.
Cook for a few seconds.
Keep on mixing and cook until soft.
Season with salt, then add the stewed tomato.
Break them a little bit, then add the bay leaf, red wine vinegar, and brown sugar.
Mix until well combined.
Turn the heat to medium low.
Step 7:
Add the cooked okra back to the pan and give it a stir.
Remove the thyme and let it simmer for 5 minutes or more.
Remove the bay leaf and serve.
