Mix well, making sure every piece is seasoned well.

Searing the chicken for the chicken chorizo recipe

Place a large pan over medium heat and add the chopped chorizo.

Cook it for two to three minutes until golden and for the fat to render, then set aside.

In the same pan, add the chicken, then sear for three to four minutes on each side.

Simmering the one-pot chicken chorizo

Once done, set the chicken aside.

Season with salt and ground black pepper and cook for two to three minutes or until soft.

Mix and cook for two minutes.

After this, add 1 cup of chicken stock, and bring it to a simmer.

(Taste test at this point, adding a little sugar to taste.)

Once simmering, transfer it to a 375-degree F oven and continue cooking it for 45 minutes.
