After this, season them with salt and ground black pepper on each side.

Now, set your pressure cooker on saute mode, then heat a little bit of oil.

Once hot, place the ribs and sear them for three minutes on each side.

(Cook your ribs by batch as they will not all fit in the pressure cooker.)

After a couple of minutes, add a serrano chili for an extra kick (optional).

Next, add 24 oz green hatch chile.

Simmering the ribs and beans in the pressure cooker

Mix everything well and let it come to a simmer.

Step 3

Once it starts to simmer, add the beans and the cooked ribs.

(The ribs should be covered with the broth.

Add a bit more water if not.)

Add freshly chopped cilantro and two bay leaves, then cover the pressure cooker with its lid.

Set it on meat setting and cook for one hour and twenty minutes.

Once done cooking, allow it to rest for at least 20 minutes before serving.
