Chop all the ingredients, then add to a blender.

Fry over medium heat until browned.

One Pot RICE AND BEANS Recipe

It will take about 7 to 8 minutes.

Step 4:

Add the vegetable puree, black beans, and salt.

Mix until well combined.

Increase the heat, then cover the pan.

Let it come to a vigorous boil.

Once boiling, lower the heat to medium-low.

Cover with the lid and cook for 8 minutes.

Step 5:

After 8 minutes, add the basmati rice and coconut milk.

Mix well and bring to a boil again.

Once boiling, reduce the heat to low.

Cook on low heat for about 10 to 15 minutes.
