Grease your two -24 cup mini muffin tins with butter or vegetable spray.
Step 2:
In a large mixing bowl, add flour, baking soda, and salt.
Whisk them until well combined.
Next, add the sugar and whisk until it becomes light and fluffy.
Then, add the peanut butter and beat, followed by the egg and vanilla extract.
confirm to scrape down the sides and bottom of your bowl as needed.
Step 4:
Add the flour mixture and whisk until well incorporated into the mixture.
Step 5:
Fill each muffin cup with 1 tablespoon of cookie batter.
While waiting, remove the foil wraps and paper liners from each of the peanut butter cups.
While still warm, gently press one peanut butter cup into the center of each one.
Let them cool completely for about 1 to 2 hours before removing them from the muffin tray.
