Step 1
Melt the butter in a saucepan.
After it melts, add the flour and stir for three to five minutes.
Once the flour had fully dissolved, add the milk gradually while stirring.
Keep stirring until the texture becomes smooth, then add the heavy cream.
Let it simmer for ten to twenty minutes until it thickens.
While the roux is simmering, go ahead and grate your cheddar cheese.
After simmering the roux, turn off the heat and add the grated cheese.
Mix well until the cheese is fully combined.

Step 2
Season the sauce with salt and pepper to taste.
After mixing, cover the sauce with plastic wrap, touching the sauce directly so it doesnt develop skin.
Set it aside while you work on the broccoli.
In a large saucepan over high heat, add the broccoli and some water.
Put on the lid and steam the broccoli for three minutes.
After three minutes, transfer the broccoli to a plate and top it with the cheese sauce.
Finish off by sprinkling some freshly ground black pepper.
