Everybody loves this crockpot dish, and its always a hit whenever I make it.
This casserole is delicious, uses pantry staple ingredients, and is super easy to prepare.

Step 2:
Add the diced onion and poblano pepper.
Step 3:
Pour the enchilada sauce over the chicken and vegetables.
Step 4:
Place the lid and cook for 6 to 8 hours on low setting.
Step 5:
Once done cooking, get two forks and shred the chicken.
Add sour cream, half cup of cheese, and green onions.
Stir until well combined.
Step 6:
Stir in the cooked rice, then sprinkle the remaining cheese.
If your rice is already cooled, you better cook it longer, about 45 minutes, on high.
Step 8:
Serve and enjoy!
