Render the fat, then crisp the bacon for about 7 to 8 minutes.
Remove with a slotted spoon onto a plate lined with paper towel.
Reserve 3 tablespoons of the rendered fat in the pan.

Increase the heat to medium, then add the onions and diced serrano.
Saute for 3 to 4 minutes.
Season with salt and pepper.

Add 3/4 cup of heavy cream.
Reduce the heat to medium to medium-low.
Add 2 teaspoons of sugar and mix again.
Cook for 3 to 4 minutes.
Add the mascarpone and cold butter.
Sprinkle 1/2 cup of shredded Parmigiano Reggiano.
Stir until well incorporated.
Toss in some of the crispy bacon and green onions.
