How to Make Strawberry Pop Tart Cookies

Step 2:

Mix in quartered berries and lemon juice.

Next, mash the berries with a potato masher or large fork.

Continue cooking and stirring until it has a jelly-like consistency.

Once the mixture is thick, remove it from heat then add the butter.

Stir until well combined.

Transfer it to a heatproof bowl, cover with cling wrap, then refrigerate.

Step 5:

Make the cookie dough.

Stir in vanilla extract and eggs.

In a medium mixing bowl, whisk flour, cornstarch, baking powder, baking soda, and salt.

Gradually add the dry mixture to the wet mixture, mixing after every addition.

Cover it tightly with plastic wrap and refrigerate foronly30 to 60 minutes.

Form each into a shallow nest.

Add two tablespoons of strawberry filling into one nest and cover it with the other.

Pinch the edges of the dough together, then gently roll to create a ball.

Repeat with the remaining mixture.

Step 8:

Preheat your oven to 375F and line a baking sheet with parchment paper.

Place inside the center rack of the preheated oven and bake for 14 to 16 minutes.

Once done, allow them to cool completely on the baking sheet.
