Mix using a spatula or spoon.
Next, add 1/2 cup of softened butter and combine with the sugar.
Pour 2 tablespoons of vegetable oil.
Switch to a whisk and mix until light and fluffy or pale yellow.
Step 2:
Add 2 eggs one at a time and mix after every addition.
Next, add two tablespoons of lemon juice and whisk.
Scrape the sides and bottom of the bowl.
Mix until there are no traces of flour.
Step 4:
Pour 1/2 cup of milk and combine well with a whisk until smooth.
Do not overmix the batter.
Step 5:
Pour the mixture into an 8x3x3 inches loaf pan with parchment paper.
Spread the top with a spatula and thump the pan on a surface until leveled.
Step 7:
While the cake is in the oven, make the lemon glaze.
In a bowl, combine icing sugar and lemon juice.
Mix until smooth and thick.
Step 8:
Take the cake out of the oven and glaze.
Put some more lemon zest on top.
Slice the cake, place it on a plate, then serve.
