The pudding is soft, sweet, and delicious, with a tropical flavor from the coconut.
It only requires a couple of ingredients and its super easy to make.
Go ahead and give this dessert recipe a try.
Remove the seeds and blend into juice.
You need 2 cups.
Step 2:
Transfer the juice into a pan then add 1/3 cup of sugar.
Mix until well combined.
Add 2 to 3 drops of red food color.
Place over heat and let it come to a boil.
Step 4:
Once the mixture is boiling, add the corn flour mixture.
Cook the mixture until it thickens.
Once thickened, let it cool for 5 minutes.
Step 5:
Pour the mixture into food grade plastic cups.
Let them cool to room temperature, then place in the fridge for an hour.
Step 6:
Remove them from the cups by placing them upside down.
Cut into round slices, then coat with desiccated coconut.
Top with mint leaves and serve.
